Dinner Dilemma

So I'm trying to get use to this whole eating healthy food thing: lots of fresh fruits and veggies. Well it's fruits most of the times (strawberries); I only eat veggies when it's part of my yummy BLT sandwich on wheat bread with honey dijon or on salad with Basil vinegarette. Okay this is making me really hungry.

But what my problem is dinner time. I don't really know what be a good dinner choice when trying to lose weight. I heard salmon is a good choice, but I think its too expensive. I can also do something with tofu but right now the only thing I can do with tofu is frying some and dipping them in soy sauce afterwards. Again very yummy, but will be fattening I think. So right now I'm eating my dinner out of Lean Cuisine meals with fresh fruits on the side.

Does anyone have any good idea for a healthy dinner that's not too expensive or too loong to cook?

Can anyone vouch for Lean Cuisine meals as healthy and okay for trying to lose weight?

here is a recipe a delicious salad from an amazing vegetarian restaurant in toronto, it sounds a bit odd but i promise its amazing!

- baby spinach
- tofu cubes, cooked in a frying pan until golden with just a little bit of oil
- sugar snap peas
- roast potatoes cut into small pieces
- goat cheese
- cherry tomatoes
- cucumber
- any light tasting, low fat dressing, a vinagarette would be best

I've been doing weight watchers for a few months and have lost 23 lbs on their "points system" (FlexPlan). I eat a lot of Lean Cuisines and Healthy Choice and Smart Ones (because they all list the WW points value on the side). They're quite tasty, too! If you have a SuperWalmart near you, they have the best prices on them. Good luck.
